Are chia seeds high in histamine?

Chia seeds are probably mostly low in histamine, but they have never been measured: the seeds are sold dry and are not fermented, so there is no known route to a high level.

Mostly low

Fine for many people. Rated 1 of 3. Not measured: rated from how it is made and stored.

How freshness and processing change it

Dry chia seeds were not measured. Soaked chia, as in chia pudding, is a moist food kept in the fridge, and the 2018 review notes that amines can keep forming in plant foods during refrigerated storage. Make chia pudding the night before rather than several days ahead.

Dry chia seeds1Mostly low

Not measured. Sold dry and not fermented. (estimate)

Chia pudding made the night before1Mostly low

Not measured. Soaked overnight and eaten the next day. (estimate)

Chia pudding kept for several days2Moderate

Not measured. Soaked chia is a moist food, and amines can keep forming in stored plant foods. (estimate)

Why we rate chia seeds 1

Chia seeds have not been measured for histamine in any of the studies we use, so this page is an estimate. None of the papers reports histamine, putrescine, cadaverine or tyramine for chia. The only seed in the data is the sunflower seed, which belongs to an unrelated plant family, so its figures cannot stand in for chia.

What we can say comes from how chia is produced. Histamine in food forms mainly when bacteria convert histidine, an amino acid, into histamine. That is why fermented foods, and fish that is not fresh, are where the reviews find the highest levels. Chia seeds are harvested, dried and sold dry, without fermentation, so they lack the usual route to a high level. That is a reason to expect little histamine, not a measurement of it.

The published diets are silent too. Chia does not appear on the 2021 review's chart of foods excluded by ten low-histamine diets, nor among the foods excluded in an earlier comparison by the same University of Barcelona team. Nuts appear on both; seeds are not mentioned.

The way chia is usually eaten raises a separate point. Chia pudding is made by soaking the seeds in milk or a plant drink, sometimes in batches for several days of breakfasts. Once soaked it is a moist food kept in the fridge, and the team's 2018 review advises eating plant foods as fresh as possible, because amines can keep forming during refrigerated storage. Making chia pudding the night before rather than days ahead is the cautious habit, and we rate a pudding kept for several days 2 as an estimate. The liquid you soak it in matters as well: five samples of milk in the team's survey had no histamine or other amines.

We rate chia seeds 1, "mostly low", as an estimate. Nothing about the dry seed points to histamine, but we keep 0 for foods that have been tested and found to have none, and chia has not been tested. If chia seems to trigger symptoms for you, note it and raise it with your dietitian, since the published data cannot settle the question either way.

Questions about chia seeds and histamine

Is chia low histamine?

It has not been measured. Chia seeds are sold dry and are not fermented, so there is no known route to a high level, and we rate them 1, "mostly low", as an estimate.

Is chia pudding OK on a low-histamine diet?

It was not measured. Eat it the day after soaking rather than keeping it for several days, because amines can keep forming in moist plant foods in the fridge. Milk, a common base, had no histamine in testing.

Evidence behind this page

  • None of the studies we use reports histamine or other amines for chia seeds; the only seed measured was sunflower seeds. 41
  • Histamine in food forms mainly when bacteria decarboxylate the amino acid histidine, and the highest levels are found in fermented foods and fish that is not fresh. 21
  • Plant foods should be eaten as fresh as possible, since histamine and other amines can keep forming during refrigerated storage. 4
  • Milk sold in Spain had no detectable histamine or other amines (5 samples). 1
