Porridge with fresh kiwi
Simmer the oats in milk, or half milk and half water, for a few minutes, stirring until thick. Top with sliced fresh kiwi.
Kiwi had no detectable histamine in 13 samples; two of ten published diets exclude it.
A low-histamine breakfast is one of the easier meals to get right: oats, milk, eggs and most fresh fruit had no detectable histamine in lab tests. The ideas below use only foods we rate 0 or 1, and nothing is cooked the day before.

Soften finely chopped onion and grated courgette in a little oil, then add beaten eggs and stir over low heat until just set.
Fry diced cooked potato with onion and sweet pepper until crisp at the edges, then fry an egg alongside. Use potatoes boiled the same morning rather than leftovers.
Spoon plain yogurt into a bowl and top with halved grapes and pitted fresh cherries. Choose plain yogurt over flavoured kinds with fruit preparations you cannot check.
Simmer rice gently in milk until soft and creamy, stirring often, then top with fresh pineapple. Make it to eat the same morning.
Blend oats into flour, mix with egg, milk and finely grated carrot to a thick batter, and cook small pancakes in a lightly oiled pan.
The usual breakfast staples are among the most consistently low foods in the studies we use. Oats had no detectable histamine in the samples tested in Spain, and a 2020 review that pooled 28 cereal samples found an average of 0.12 mg/kg. Milk had none detectable in five samples and eggs none in fourteen. Fresh fruit pooled across 136 samples averaged 0.07 mg/kg, and the highest single fruit sample was 2.51 mg/kg.
The published diets are less consistent than the measurements. A 2021 review of ten low-histamine diets found that four exclude eggs and four exclude yogurt, although neither had measurable histamine in the Spanish samples, and one excludes milk. Some lists also exclude banana, strawberry and citrus fruit, mostly because of other amines such as putrescine, or the unproven idea that some foods make the body release its own histamine, rather than because of histamine in the food. Every ingredient below links to its own page, so you can see where the lists split and decide for yourself.
What usually goes wrong at breakfast is not the recipe but the storage: porridge or rice cooked the day before, a smoothie blended the night before, or ham and cheese from the deli counter. Histamine forms while food is kept and is not destroyed by heating, so make breakfast fresh, or freeze portions you cook ahead as soon as they have cooled.
Aged cheese, cured meats and fermented foods are the breakfast items that rate highest on our scale, and none of them appear below. If you have marked foods in your own list, any idea that uses a food you avoid is flagged.
