Is chicken high in histamine?
Fresh chicken is low in histamine: fresh meat had none detectable in 199 lab samples. Leftover, rotisserie, canned and deli chicken were not measured and carry more risk.

What each source says
| Source | Verdict | What it says, in our words |
|---|---|---|
| Lab measurements, Spain 1 | Measured | No detectable histamine in 199 samples of fresh meat. |
| 10 published low-histamine diets 1 | 3 of 10 exclude fresh meat. | |
| Low-histamine diet review, 2021 1 | No histamine expected in fresh meat if freshness and hygiene are guaranteed. | |

Measured histamine
| Food tested | Samples | Histamine | Other amines |
|---|---|---|---|
| Fresh meat sold in Spain (group) 1 (Table 1) | 199 | not detected | putrescine mean 1.35 mg/kg; cadaverine mean 5.02 mg/kg; tyramine mean 4.32 mg/kg |
mg/kg = milligrams of histamine per kilogram of food. "Not detected" means below the laboratory's detection limit.
How freshness and processing change it
The rating holds only while chicken is fresh. Histamine forms when bacteria act on meat over time, even in the fridge, and it survives reheating. Buy it fresh or frozen, cook it soon and eat it the same day; if you batch-cook, freeze portions as soon as they have cooled.
Fresh meat had no detectable histamine. (measured)
Not measured; freezing halts bacterial growth. (estimate)
Not measured. Storage time adds histamine, and reheating does not remove it. (estimate)
Not measured; you do not know how long it was kept warm or chilled. (estimate)
Not measured as chicken. Cooked meat products averaged 0.30 mg/kg in 48 samples, up to 4.80 mg/kg; eat an opened pack within its stated days. (estimate)
Not measured; processed and stored for longer. (estimate)
Why we rate chicken 0
Fresh chicken is one of the safest proteins on a low-histamine diet, and the catch is in the word "fresh". Meat does not naturally contain histamine in any meaningful amount; histamine forms when bacteria break down the amino acid histidine as meat ages. In a Spanish survey of 199 samples of fresh meat, histamine was not detected in any of them, and the other amines tested were low. The 2021 review that reports these figures says that fresh and cooked meat are not expected to contain histamine as long as freshness and hygiene are guaranteed, and that the risk comes when they are not.
The published lists mostly agree. Only three of the ten low-histamine diets in that review exclude fresh meat, and those that do are likely being cautious about storage rather than about the meat itself.
That is why the questions people actually search are about forms of chicken: leftover chicken, rotisserie chicken, canned chicken, deli chicken. None of these were measured in the studies we use, so we rate them from the mechanism. Cooked chicken kept for days gives bacteria time to form histamine, even in the fridge, and reheating does not remove it, because histamine is heat-stable. Ready-cooked rotisserie chicken has an unknown history of being held warm. Canned chicken has been processed and stored for longer. We rate these 2, "moderate", as an estimate. Sliced deli chicken is a 1: chicken itself was not tested, but cooked meat products as a group averaged 0.30 mg/kg of histamine in 48 Spanish samples, so an opened pack eaten within its stated days is a smaller risk than leftovers.
We rate fresh chicken 0, "low". To keep it that way, buy it fresh or frozen, cook it soon, and eat it the same day. If you batch-cook, freeze portions as soon as they have cooled rather than keeping them in the fridge for days. Chicken is also the natural swap for salami, chorizo and other dry-fermented meats on a sandwich or pizza.
Questions about chicken and histamine
Is leftover chicken high in histamine?
It was not measured in the studies we use, but histamine forms in stored meat and is not destroyed by reheating, so we rate leftover chicken 2 as an estimate. Freezing cooked portions soon after cooling keeps them closer to fresh.
Is rotisserie chicken low histamine?
We rate it 2 as an estimate. It was not measured, and you cannot know how long it was kept warm or chilled before you bought it.
