Is whisky high in histamine?
Whisky is probably low in histamine, though it has not been measured: it starts as a fermented grain mash, like beer, but is then distilled and aged. Its alcohol still slows histamine breakdown.

What each source says
| Source | Verdict | What it says, in our words |
|---|---|---|
| Review of alcohol and migraine, 2025 1 | Very little has been published on amines in spirits; its table has no histamine data for them. | |
| 10 published low-histamine diets (2021 review) 2 | Spirits are not on the review's chart of excluded foods; wine and beer are excluded by all 10. | |
| Review of amines in beverages, 2022 3 | In brewing, the fermentation stage forms most amines; histamine is generally not found in the raw materials. | |
| Review of histamine intolerance, 2020 4 | Alcohol and acetaldehyde compete with histamine for a shared enzyme; alcohol can cause a temporary, reversible DAO deficiency. | |

How freshness and processing change it
Whisky is aged in wooden casks before bottling and keeps for years afterwards. None of our sources measured amines in whisky at any stage, so we cannot say whether age, cask type or a cask-strength bottling makes a difference.
Not measured. Distilled, so little histamine is expected; the alcohol effect is unchanged. (estimate)
Not measured. Honey, cream or fruit are added; one study found histamine in more than half of the liqueurs it tested. (estimate)
Why we rate whisky 1
Whisky has not been measured for histamine in any study we could find. A 2025 review of alcohol and migraine says that very little has been published on amines in spirits, and its summary table has no histamine figures for them. This page explains our estimate and where it could be wrong.
Whisky starts out close to beer. Malted barley, or a mix of grains for bourbon and blends, is mashed and fermented with yeast into a liquid that brewers would recognise. A 2022 review of amines in drinks explains that in brewing, the fermentation stage forms most of the amines, and that histamine is generally not found in the raw grain at all. In a University of Barcelona survey, 176 beers averaged 1.23 mg/L of histamine, with 95% at 3.28 mg/L or less. The fermented liquid for whisky may carry similar small amounts, but it was not measured.
Then comes distillation, which is what makes whisky a different drink. The liquid is heated and the alcohol-rich vapour is condensed, leaving most of the fermented liquid in the still. A 2016 study describes biogenic amines, the family histamine belongs to, as non-volatile, which is the reason to expect little of it in the spirit. After that, whisky is aged in wooden casks, often for many years. No source we use measured amines in whisky before or after cask ageing, so that part is unverified.
The alcohol effect is certain. Alcohol and acetaldehyde compete with histamine for aldehyde dehydrogenase, an enzyme the body uses for both, and a 2020 review lists alcohol among the causes of a temporary, reversible DAO deficiency.
We rate whisky 1, "mostly low", as an estimate, the same as vodka and gin, and flag it as affecting histamine breakdown. Whisky liqueurs and cream liqueurs are a step higher. Ask your doctor or dietitian whether alcohol has a place in your diet at all.
Questions about whisky and histamine
Is whisky low in histamine?
Probably, but it has not been measured. It is fermented like beer and then distilled, and the amines that include histamine are non-volatile, so little should reach the spirit. The alcohol still slows histamine breakdown.
Is whisky better than beer for histamine intolerance?
Whisky likely brings less histamine than beer, which averaged 1.23 mg/L in 176 samples, but whisky was not measured. Both contain alcohol, which slows histamine breakdown, and all 10 published diets exclude beer.
Evidence behind this page
- Very little has been published on biogenic amine levels in spirits; a 2025 review's summary table reports no histamine data for spirits. 1
- In beer, the fermentation phase is responsible for most amine formation, and histamine is generally not found in the raw material used for brewing; spirits are made by distilling fermented products. 3
- Across 176 beers sold in Spain, histamine averaged 1.23 mg/L and 95% had 3.28 mg/L or less. 2
- Biogenic amines, the group of compounds that includes histamine, are non-volatile. 6
- In a study reported in a 2022 review, histamine was found in more than half of the liqueurs tested, which included honey and milk liqueurs. 3
- Alcohol and its metabolite acetaldehyde compete with histamine for aldehyde dehydrogenase, and DAO deficiency can be a temporary and reversible condition caused by substances such as alcohol. 4
